Banana and Pecan Muffins

Description

These yummy muffins are so easy to make. I've adapted the recipe from my aunty's muffin recipe.

Ingredients

2 cups wholemeal flour
1 tsp baking powder
2 tsp baking soda
2 tabs golden syrup
1/4 cup brown sugar
60g butter melted
1 egg
1 cup low fat milk
3 small very ripe bananas mashed
120g pecans roughly chopped

Instructions

Preheat the oven to 180 degrees celsius.
1. Put the flour, baking soda and baking powder into a mixing bowl.
2. In another bowl mix together the butter, golden syrup and brown sugar.
3. Add the butter mixture to the flour and stir.
4. Add the egg and milk and mix until just combined. Don't over mix.
5. Add the banana and pecans and mix.
6. Spoon into greased muffin trays (I used two 12 hole trays) makes about 16 large muffins
7. Bake in the oven for 20-25 mins
8. Cool on a cooling rack and enjoy :)

Notes

Dust with icing sugar if you like them a little sweeter. You can also substitue half of the pecans with sultanas or dark choc bits if you like.
