1 french stick or large baguette 6 roma tomatoes, thinly sliced 1 handful basil leaves, torn into pieces 4 cloves of garlic, minced 1 cup extra virgin olive oil salt and pepper
Instructions
Mix tomatoes, basil, garlic and olive oil in a bowl and add generous amounts of salt and pepper. Cover the bowl and let the mixture stand in a warm place (in the sun if possible) for 1 - 2 hours.
Pre-heat oven to 180c degrees. Slice bread into pieces and place in baking tray. Drizzle the liquid from the bruschetta mixture over all of the bread. Bake in oven for 15 mins.
Place bread on serving platter and spoon a little of the bruschetta mix onto each piece. Serve and watch them disappear!
