a delicously moist cake that is super simple to make...everything is put in the food processor.
in food processer, add 4 eggs & 350g caster sugar. mix in processor.
drop 300g softened melted butter on egg mix with zest of 2 lemons. pulse mixture.
add 350g SR Flour, 250ml milk & pinch salt.
pulse till combined.
pour mixture into a large cake tin, it rises substanially.
bake approx 1hr on 180deg
serve cold with whipped cream for afternoon tea or warm with hot custard as a dessert
can serve up to 10 depending on the size of slices
