Waffles, apples and whipped spicy sour cream

Serves 6-8

Description

Lovely Fluffy Waffles (topped with warmed stewed apples, light and spicy sour cream, and maple syrup).

Ingredients

Waffles:
185 ml evaporated milk (Carnation)
1 tablespoon vinegar
125 ml water
185 grm SR flour
1/2 teaspoon salt
1 teaspoon bi-carb soda
2 tablespoons castor sugar
2 eggs lightly beaten
125 grm melted butter

Spicy Sour Cream topping:
200 ml sour cream
1 tablespoon honey
1/4 teaspoon cinnamon/and a little sprinkle of nutmeg
1 tablespoon brown sugar

Warm stewed apples or bought apple sauce

Instructions

Waffles: Combine evaporated milk and water and add vinegar to sour (curdles a little).
Combine dry ingredients add egg, soured milk mixture and butter.
Whisk til batter is smooth.
Heat waffle iron and brush with oil or melted butter, pour in a little batter (not too much as it rises a bit)and cook til golden and a little crisp.

Sour Cream: Combine all ingredients and whisk til light and fluffy.

Serve waffles with warmed stewed apples, maple syrup and cream.

Notes

I also like to top my waffles with warmed apricot jam mixed with a little brandy and cinnamon, maple syrup and sour cream. The cream does not taste sour just a little tangy. The cream loses its volume when stored too long so make just before you need it, still tastes great though.
