Any seasonal fruit would work too. Eg. Strawberries, blueberries, raspberries, peaches etc.
Ingredients
1 1/2 cups icing sugar 1 cup desiccated coconut 1 cup ground almond meal 1 cup SR Flour 2 tabs custard powder 6 egg whites 200 gram melted butter (cooled) 10 plums
Instructions
Preheat oven to 175 deg C
Grease and line 22 cm cake tin
Sift sugar, flour, custard powder into bowl Add coconut and almond meal Mix dry ingredients well Make well in centre of dry mixture Add egg whites and butter Stir gently to combine
Pour into baking tin
Cut plums into quarters
Arrange over cake batter
Bake for 1 hr or until a skewer inserted into centre comes out clean Stand 5 mins Turn onto wire rack to cool Dust with icing sugar. Serve with cream.
