Schnitzels 3 ways

Description

Most people like schnitzels, can be chicken, pork, veal or beef. Prepare meat as you normally would and instead of dipping in beaten egg use these mixtures and then crumb with breadcrumbs. Probably best using thinly sliced chicken fillets.

Ingredients

Basil Parmesan schnitzel
3 teaspoons chopped basil or use some from a jar
2 tablespoons Parmesan cheese
1 egg yolk
1 tablespoon cream

Mustard schnitzel
2 tablespoons mild mustard (mix grain and smooth)
2 egg yolks
2 tablespoons cream

Peanut schnitzel
2 tablespoons smooth peanut paste
2 tablespoons soy sauce
1/2 teaspoon chilli powder
1 egg yolk

Mixtures may be a little thick add a little more cream or add another egg yolk

Instructions

The technique is the same for all three variations.
Mix ingredients to smooth consistency and dip the meat ensuring they're well coated.
Dip into dried breadcrumbs and pat firmly.
After resting to absorb flavours, fry in hot oil until golden and crispy.
