Description

If you can't make it out to the pub, cook one at home :)

Ingredients

2 chicken breasts, pounded to about 1 inch thick
2 olive oil
1 clove of garlic, minced
1 tsp of oregano
1 tin of chopped tomatoes
50g grated mozzarella cheese
25g grated parmesan
1 egg, beaten
25g plain flour
100g breadcrumbs

Instructions

1. Add a glug of olive oil in a saucepan and heat. Add the garlic

2. Cook the garlic for a couple of minutes and add the tin of chopped tomatoes. Season with the oregano and cook on medium heat for about 20 minutes

3. While that's cooking, coat the pieces of chicken in flour. Dip into the egg, and then into the breadcrumbs. Make sure the the chicken is evenly covered

4. Get the oven ready in the background and preheat to 200C

5. Add some more olive oil to a frypan, enough for shallow frying. Once the oil has been heated up, add the crumbed chicken and fry until golden brown

6. Place the chicken in a roasting tray and pour over the tomato sauce. Sprinkle over the grated cheeses and place in the middle of the oven

7. Bake until the cheeses have melted and the chicken is cooked through, about 10-15 mins

8. Serve with a salad and most importantly, a beer!

    Good call Brett, you can't beat the chicken parma :) I also like using a slice of ham just underneath the cheese
