Moroccan lamb, pumpkin and cous cous

Description

Apologies for some of the vagueness in the ingredients and prep...this one comes straight from my head! Lol

Ingredients

400gm lamb fillet
1/4 kent (or other) pumkin, peeled and cubed
1 block of feta cheese (from the deli), cubed
1/2 cup pine nuts, pan roasted
2 cups of baby spinach leaves
cous cous for 4 people (refer to box for instructions)
Butter (for cous cous - again, refer to box for exact measurements)
2 Tbs olive oil
1 Tbs masterfoods morrocan seasoning
Salt and pepper to taste

Instructions

Pre-heat oven to 180C. Place lamb fillets and cubed pumpkin in a baking tray with olive oil. Sprinkle both with moroccan seasoning and mix to make sure they have a nice coating. Bake in oven for 20 minutes or until pumpkin is golden.

Once lamb and pumpkin are cooked, remove and rest while you make up the cous cous. When ready to serve, slice lamb into small, bite-sized pieces. Place lamb, cous cous, spinach, pumpkin, pine nuts and feta cheese in a large bowl and mix gently. Serve and enjoy!
