500gms chicken breast fillets (approx 3 large single breasts) 1 - 2 cups of breadcrumbs 1/2 cup plain flour 3 Tbs parmesan cheese 1 ts vegetable stock 1 ts paprika 1 clove garlic 1 Tbs parsley 2 eggs 1 Tbs olive oil
Instructions
Cut away each tenderloin from the breast and then slice chicken breasts in half (flat ways so that they are thinner for even cooking).
Get 3 bowls for preparing the crumbing mixture. In the first bowl mix flour, paprika and vegetable stock. In the second bowl beat the eggs together with the garlic minced. In the third bowl mix breadcrumbs, parmesan cheese and parsley.
Crumb the chicken by placing each piece in the flour mixture, then in the egg and finally in the crumb mixture. Repeat until they are all done.
Heat olive oil in frying pan and cook chicken pieces on medium heat for approx 8 minutes on each side until golden brown. Serve with either salad or vegetables of your choice.
