Devon Clotted Cream

Description

After tasting clotted cream in Devon, England I was hooked.
Unable to buy in Australia I make my own. It is heavenly rich with a slight caramel flavour. It takes patience but you are rewarded at the end with a (to die for) Devonshire Tea that ordinary cream cannot match. Enjoy!

Ingredients

Cream - 4 cups
(Use the highest fat content cream you can buy)

Instructions

1. Set oven temperature to 110c on bake function.
2. Pour cream into a shallow ovenproof dish.
3. Place dish in a water bath on the lowest shelf in the oven.
4. Bake for around 6 hours.
5. Refrigerate for 12 hours.

Notes

Whilst baking, it will form a crust on the top, this is good, this will be your clotted cream. Don't panic about the cooking time, it will take all this time to form the crust.
When it has set in the fridge, scrape off the top layer, this is clotted cream at it's best!
Serve on top of a scone with Strawberry jam, heaven :)
