Egg n Bacon Pies

Description

These little pies can be eaten straight away or kept in the fridge, re-heated or eaten cold as a quick snack.

Ingredients

* 1 packet of puff pastry
* Grated cheese
* Bunch of spring onions
* Bacon rashers or bacon pieces
* 6 eggs
* approx 3 Tablespoon of milk

Instructions

* Preheat oven to 180 or 160 if fan forced
* Oil muffin trays
* Cut pastry into 16 squares (may need larger pieces if muffin tray is larger)
* Put a square of pastry into each place and push it down in the tray
* Dice bacon and spring onion
* Place 3 -4 pieces of bacon in each pie
* Place 3 - 4 pieces of onion in each pie
* Place a pinch of grated cheese in each pie
* Beat eggs with milk in jug (like an omlete mixture)
* SLOWLY pour egg mixture in each pie about 3/4 full
* Bake in oven until golden brown
* Remove from tray and cool on cooling rack to prevent moisture.

Notes

* The size of the pies and amount of filling can change depending on the size of the muffin/pie trays you use. Best is trays with 12 spots.
* Make sure you fill pies 3/4 full as it will expand in oven.
* You may need to make more egg mixture if you run out :)
