Yummy Chocolate Shortbread

Description

I love making shortbread as a gift for friends and family at Christmas time. These are so yummy though that I usually want to eat them all myself.

Ingredients

2 cups plain flour
1 cup icing sugar
1/4 cup cocoa
1/4 cup dutch cocoa
1 teaspoon vanilla essence
250g butter (softened)

Instructions

Preheat oven to 180 degrees celcius.
Place all ingredients in a large mixing bowl. Mix together with an electric beater until combined.
Roll the mixture into small walnut sized balls and press down on a baking tray with a fork.
Bake for 10-15 minutes- keeping an eye on them as they burn easily.
Cool and enjoy.

Notes

I also make these cookies sometimes using my fancy cookie maker (cookie press) however I usually add more butter as it can get stuck and wont form the shape correctly. It's also really important that the butter is softened as otherwise the ingredients wont combine well.

    Dutch Cocoa is darker in colour than regular cocoa and its stronger in flavour. Its not usually available at Supermarkets but you can get it at the Deli. I use the Van Houten brand. If you cant find Dutch Cocoa anywhere just use normal cocoa.
