Citrus Salmon Mixed Green Salad

Description

This is one of my Signature dishes at my restaurant. Bursting with flavour, every bite is amazing. Now, commercially for my restaurant I use a Kiwi Citrus dressing from Renee's, but at home I use either Kraft's Signature Mandarin Orange with Sesame or Raspberry Vinaigrette because this particular Renee's is not available at the local grocers.

Use 5oz portions for Lunch and 7oz for Dinner.

Ingredients

4~ 5 -7 oz Atlantic salmon fillets
1 cup Citrus dressing of choice ( Kraft's Signature mandarin orange or Raspberry vinaigrette works well)
1 lb bag of mix greens ( Spring Mix)
4 oranges, peeled, sliced into 8 wedges each
2 red peppers, cut into 16 slices each
4 fl oz sunflower seeds
1 lemon cut into 4 wedges
4~ 4 oz portions of dressing

Instructions

1. Day before or 6-8 hours before serving...With BBQ or indoor grill, mark and cook Salmon 3/4's of the way through.

2. In a seal-able container, place Salmon fillets and pour 1 cup dressing over to marinate. Seal container and set aside minimum 6 hours, turning once.

3. Remove Salmon from marinade, place on BBQ or indoor grill to heat through and finish cooking.

4. Arrange 4 plates on counter, place mix greens in center of the plate.

Arrange orange sections around the outer edge of greens, followed by red peppers.

5. When Salmon is cooked place in the center of the mixed greens, sprinkling with the sunflower seeds and topping with the lemon wedge.

Serve with 4oz of dressing.
