Caesar salad dressing

Description

Don't be scared of trying this because it honestly takes no time and the taste is so much better than store bought!!

Ingredients

2 cloves of garlic, crushed
2 egg yolks
3 Tbs lime juice
1 Tbs worchestershire sauce
1 small tin of anchovies, mashed (this is optional but you should give it a go because it adds sooooo much flavour)
2 - 3 cups of oil (for this recipe you need to use oil with a very light flavour....if you only do olive oil then use extra light or it will over power the other flavours in your dressing)
1/2 cup of parmesan cheese, grated
Salt and pepper to taste

Instructions

Mix minced garlic with a pinch of salt. Whisk together with egg yolks, lime juice, worchestershire sauce and anchovies. Dribble oil into mixture, whisking quickly until thick and creamy. Add parmesan cheese and salt and pepper to taste. Pour over salad just before serving.

Notes

This recipe can be kept in the fridge for up to a couple of weeks and still be very tasty. Just take out of the fridge about 10 mins before using and give it a quick whisk and pour!
