Salmon Boats

Description

Yummy little starter that is quick to make!

Ingredients

1 bacon rasher finely chopped
2 spring onions (green shallots) finely chopped
220gm can red salmon, drained
1/4 cup grated tasty cheese
1 Tbs mayo
1/4 cup sour cream
2 packets of puff pastry boats (or you can use 2 muffin tins and some frozen puff pastry and make your own)
2 Tbs grated parmesan cheese

Instructions

Cook bacon in frying pan until crisp. Add spring onions, mix well and remove from heat. Stir in salmon, tasty cheese, mayo and sour cream and mix well. Fill pastry boats with salmon mixture, place on oven proof tray and sprinkle with parmesan cheese. Bake in a moderate oven (170c - 180c) for 10 minutes. This recipe makes 24.

Notes

Filling can be made up a day before required. Fill boats just before heating. Not suitable to freeze or microwave.
