Serves 5

Description

If your kids don't like eating vegies (like my 5 year old), you are guarenteed they will come back for seconds with this recipe. Left-overs work well with this side-dish, but this will shorten your cooking time.

Ingredients

Mix chopped vegetables (broccoli, cauliflower, carrot etc.)
440g can of cream of mushroom & chicken soup
1/2 cup mayonnaise (optional)
1 teaspoon curry powder
1 cup grated cheese

Instructions

Cut up vegetables and place into a lightly greased baking dish
Combine soup, mayonnaise & curry powder
Pour over vegetables, trying to cover all of them
Cover with foil & bake in oven for 45 minutes
Remove foil, sprinkle with cheese
Return to oven for last 15 minutes until cheese is melted & brown
Serve as a side-dish
