Description

A family favourite that is also perfect to serve to guests. Easy to make, absolutely delicious to eat, always moist and tasty.

I saw this recipe on a television show many years ago - its name comes from the guest celebrity who shared their recipe and that was Molly Meldrum !

Ingredients

4 half chicken breasts
Breadcrumbs (enough to coat chicken)
2 tablespoons grated parmesan cheese
1 egg (lightly beaten and seasoned with salt and pepper)

Sauce:
125 gm butter
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon chopped fresh parsley
1 clove garlic (crushed)

Instructions

Dip chicken breasts in lightly beaten egg then coat in combined breadcrumbs and grated parmesan cheese. Place crumbed chicken in an ovenproof dish. No need to be too fussy about the crumbing, any left over crumbs can be sprinkled over the chicken in the baking dish.

Melt butter (in a pan or a microwave) and lightly beat in Worcestershire sauce, Dijon mustard, crushed garlic and chopped parsley with a fork.

Pour evenly over chicken and bake in a moderate oven (175-180 degrees C) for 20 mins.
