Smoked Salmon & Cream Cheese Scrolls

Description

Fabulous finger food to serve with cocktails or pre dinner drinks. So easy to make, always a winner with the guests.

Ingredients

2 sheets/pieces Mountain Bread (I used sundried tomato flavoured Wraps - use your favourite kind)
2 packets cream cheese
1 lemon
1 ... Packet of smoked salmon
1 avocado, peeled and chopped into small cubes
5-10 drops tobacco sauce
1 garlic clove, crushed
1/2 red or green capsicum finely chopped
Salt and pepper to taste
Approx 1 tablespoon chopped fresh dill (optional if you don't like dill, can be substituted with chives)

Instructions

Combine cream cheese, finely grated rind of half the lemon and juice of 1/2 the lemon, chopped avocado, capsicum, garlic, tobasco, dill and 2/3 of the smoked salmon (torn into pieces) and salt and pepper. Stir gently to combine ingredients.

Spread half of mixture evenly over one of the wraps and place pieces of smoked salmon over the cream cheese spread. Gently roll into a long roll and wrap firmly in cling wrap.

Refrigerate for at least 1 hour then remove cling wrap and cut into 1 inch slices, using a sharp knife to create approx 12 scrolls (per wrap).

Notes

The cream cheese filling can be used to top mini cheese and chive pikelets instead of spreading on wraps if preferred. Top pikelets with some of the filling, a piece of smoked salmon and small sprig of fresh dill.

A friend asked me for this recipe .. I tend to make, taste and create this as I go so this is as close as I can remember to what I served at my daughter's 21st recently.
