Sultana tealoaf

10 mins minutes to prepare and 1 hr soaking/40/45 mins cooking minutes to cook

Serves 4

Description

A delicious loaf cake for afternoon tea.

Ingredients

Butter
40 g bran flakes
115 sultanas
85 g demerara sugar
300ml semi skimmed milk
200 gself raising flour

Instructions

Grease a loaf tin and line bottom with greaseproff paper
put the bran flakes, sultanas,sugar and milk into a mixing bowl
cover and leave to soak in the fridge for an hour
preheat oven to 190 C/375 gas mark 5. stir the flour into the soaked mix
mix well then spoon into loaf tin, bake in the oven for 40.45 mins
try the tip of a knife in the middle to test if done.
leave to cool on wire rack, when cold turn loaf out and take paper off the bottom.
Serve with tea or fruit juice, keep left over cake in airtight container and consume with 2/3 days.

Notes

adjust oven if fan operated..

    I forgot to mention that the wet mix can be left overnight in the fridge, thats if you want it warm for your breakfast?

    I might be naughty and try replacing my raisin toast in the morning with some of this cake :)
