Salmon with Cucumber Yogurt Sauce

Serves 1

Description

A beautiful light healthy dinner that can easily be adjusted to feed 1 or multiple people

Ingredients

1 Filet of Salmon

2 Tbsp olive oil

½ Cup plain yogurt

2 Tbsp thinly sliced onion (whatever kind you like, I use yellow)

¼ Cup diced cucumbers (remove the skin before dicing)

1 Tbsp dried dill

½ tsp garlic powder

1 Tbsp lemon juice (can add more to taste)

Salt and Pepper to taste

1 Cup cooked brown rice (I like short grain rice, but any kind you like to eat will do)

Instructions

First:
Prepare the rice either in a rice cooker or on the stove.

Next:
Mix the yogurt, onions, cucumber, lemon juice, dill, garlic powder and salt and pepper in a bowl.

Then:
Heat some oil in a sauté pan at medium to medium high heat. Salt and pepper and drizzle a little olive on one side of the salmon filet. Once the oil is hot, put the filet, seasoned side down, in the pan. Then sprinkle salt and pepper on the other side of the filet. Cook filet about 4 minutes on each side. Can do more or less depending on how you like your salmon cooked. Do higher heat if you just want to sear the outside.

Last:
Put the rice in a biggish bowl or on a plate. Put the salmon on top of the rice. Top the salmon with the yogurt mixture and serve.

Notes

Note:
This recipe is great if you are living alone because it’s so easy to just make one portion, but it can also be easily made for multiple people. Also, the ingredients can easily be adjusted to your taste. Another great thing is if you aren’t in a carby mood, you can just not make the rice and substitute in a nice salad.
