Never Fail RED VELVET Fudge

Description

This is a marshmallow fudge recipe, it is easy and sets perfectly every time.

Ingredients

vegetable cooking spray
2 cups sugar
1/4 cup butter
1/2 teaspoon salt
1 cup heavy cream (whipping)
3 1/2 cups mini marshmallows
2 cups white chocolate chips
1 cup semisweet chocolate chips
1 teaspoon red gel (wilton no taste red) food colouring
1 teaspoon vanilla

Instructions

Line a 9x13" baking pan with parchment paper, cutting parallel slits so it sits inside like a box (you can fold down the side but I never bother). Coat evenly with cooking spray and set aside.

Prepare all ingredients because this is quick.

In a large saucepan (like for cooking pasta), cook sugar, butter, salt, cream and marshmallows. stirring constantly to melt and mix well (5 min).
Boil at med-high for 5 minutes stirring occasionally, don't burn it.it should be a pale cream colour.
Take off heat and add both types chocolate chips, vanilla and food colouring all at the same time.
Stir fast and mix until all the chips are melted and it is all a uniform colour.
Pour into prepared baking pan and let it set for 3 hours. Cut into bite size pieces and if you want, top with one or two white chocolate chips.
Enjoy ans share if you must.
Store in an airtight container for up to a week. You can refrigerate, but it might change the texture slightly.

Notes

I looked for an easy red velvet fudge recipe for days. I did come across a few, all required a candy thermometer among other more technical ingredients. This recipe adapted the easy fudge marshmallow fudge recipe, to make into the super popular red velvet. In 10 minutes, plus prep time, it's done!
You can also cut the fudge into little shapes, but I hate wasting anything, so squares works for me.

    Hi Mary, it is not melted, so a 1/4 cup of solid butter. Enjoy, it turns out nice!

    I made the fudge for Christmas and it was delicious! The family raved about it! It was very easy to make although I left out the food colouring as I liked the nice brown fudgy colour. Thanks for sharing! :)
