Description

This is a very easy and delicious meal. You can actually use this sauce on anything, another seafood or chicken it is very versatile. ENJOY

Ingredients

2 jars Classico Spicy Basil & Tomato sauce
1lb mushrooms
1 T. Minced garlic in oil
2 bags fresh spinach
2 lbs. Mussels
Red Pepper Flakes (optional)
Garlic Bread

Instructions

Clean and slice mushrooms, discard end of stem. Scrub mussels. Sautee mushrooms with garlic, add sauce let simmer for 10 min. Start water boiling for mussels. Heat oven for garlic bread. When water is boiling place mussels in water. Put garlic bread in oven. Place spinach in sauce, stir gently and place lid on pot, should be on simmer. All should be done at the same time. Take garlic bread out of oven, set aside. Drain mussels, stir spinach in sauce again and put lid back on. Remove any mussels that are still closed and discard. Put mussels on a platter with open mussels facing up. Pour sauce, with wilted spinach over the platter. Slice garlic bread and cut into triangles, place garlic bread around edge of platter.

Notes

The sauce is a little spicy as is, we like it a little hotter and add a pinch of red pepper flakes. I also like a lot of garlic so I often use 2 T. instead of 1.

(will add photo next time I make it)
