Mini Spinach and Ricotta Triangles

Serves 6+

Description

These are great little party snacks.

Ingredients

4 sheets butter puff pastry
200g fresh ricotta cheese
60g feta cheese
1 egg
20g frozen spinach (defrost and squeeze out excess moisture)
salt and pepper to taste
1 egg beaten for egg wash

Instructions

1. Preheat oven to 180 degrees celcius
2. Cut each pastry sheet into 9 squares
3. In a bowl mix the cheeses, egg, spinach and salt and pepper until combined
4. Place a small teaspoon of mixture onto each square and brush one half of the square with egg wash
5. Fold the squares over from corner to corner and press down the edges to seal well
6. Place the completed triangles on trays lined with baking paper and brush with the remaining egg wash
7. Bake in the oven for approximately 25 minutes or until they are golden brown
8. Enjoy (Makes 36)

Notes

Add as much or little spinach as you like.
