Mini Asparagus Quiches

Serves 5+

Description

These quick and easy quiches are sure to be a crowd pleaser at your next party!

Ingredients

2 sheets frozen puff pastry defrosted
1 425g can asparagus cuts and tips (or spears) drained
2 large free range eggs
1 cup light cream
1/2 small onion diced
1/2 teaspoon olive oil
100g grated tasty cheese
1/4 teaspoon of salt
pepper to taste
olive oil spray

Instructions

Pre-heat the oven to 180 degrees celcius.
Spray two 12 hole muffin trays with olive oil.
Cut each sheet of puff pastry into 9 squares. Place each square into a hole in the muffin tray.
Lightly fry the onion in 1/2 teaspoon of oil. Set aside.
Mix the eggs and cream well. Season with salt and pepper.
Place 3-4 pieces of asparagus into each mini quiche. Top with a little fried onion.
Pour in the cream mixture and top with a little grated tasty cheese.
Place in the oven for about 20 minutes or until golden brown.
Makes 18 mini quiches.
