Lamb Shanks with Cranberry Sauce

Serves 4

Description

Perfect hearty dish for winter. There is nothing like super tender lamb shanks!

Ingredients

1 tablespoon olive oil
6 lamb shanks
20g butter
2 tablespoons plain flour
1.5 cups chicken stock
1 cup red wine
jar whole berry cranberry sauce

Serve with mashed potatoes or rice (I actually serve with brown rice, but most people I cook for prefer good old mashed potatoes!)

Instructions

Preheat oven to 200°C. While you are doing that, heat oil in a baking dish over high heat.

Cook shanks, for 4 to 5 minutes on each side or until brown on all sides. When done, put them aside on a plate.

Melt butter in dish, add flour and cook for 1 minute. Dlowly add stock, wine and cranberry sauce.

Season with salt and pepper and bring to the boil. Put the shanks back in the baking dish

Cover dish, transfer to oven and bake for 1 hour. Remove lid and bake for a further 30 minutes or until shanks are tender
