Herb and Garlic BBQ Salmon

Serves 6

Description

Easy and quick makes a great summer dish that works either with the whole fish or fillets with skin on them.

Ingredients

1 whole salmon
3/4 cup of mayonnaise
2tbls of lemon juice
2tsp of dry dill (little more if fresh is used)
1tsp of thyme
1tbls of parsley
1tsp of minced garlic
1/4 cup of softened butter (margarine will work too)
Salt and pepper to taste (I do approx 1/2tsp of each)
3 slices of fresh lemon

Instructions

Pre-heat bbq on a medium heat. Combine all the ingredients, except the fish and lemon slices, together in a bowl then using your hands liberally rub mixture into the fish inside and out. Place lemon slices firmly inside the salmon and wrap the whole fish tightly inside aluminum foil. Cook on indirect heat for approx 25min. Keeping the lid closed on the bbq is the key here thus trapping the heat inside. I use the warming rack and turn all my burners down to low once the fish is in

Notes

Its much easier to de-bone the fish after cooking it just open it up pull out the back bone and then remove the few bones left over.
