HAWAIIAN CHICKEN

Description

This a wonderful and very tasty dish - very simple to make.

Ingredients

2 fryers - cut up and browned, 1 can of pineapple - chunks - drained and reserve the liquid, 1/2 green bell pepper - sliced, 1/2 red bell pepper - sliced, 1 bunch of green onions - chopped, 1/2 tsp. ginger, FOR THE SAUCE: 1 cup of pineapple juice, 1/2 cup of wine vinegar, 1/2 cup of brown sugar, 2 Tbs. of corn starch, 2 Tbs. or soy sauce, a pinch of salt

Instructions

For the chicken portion - arrange in a baking dish and top with pineapple and peppers. Sprinkle with ginger, and pour the sauce over the top and bake at 350 degrees for 1 hour. Top with green onions. To make the sauce: Combine the ingredients and bring to a boil, stirring until thickened and clear. Pour over the chicken and bake as directed.

Notes

This is delicious - I like to serve it with rice on the side, or maybe even fried rice. You can cook it all on top of rice if you want to - but it tends to be too much rice that way.

    I have a similar recipe which I omit the soy sauce and ginger and replace with curry powder - just before serving add two cut up bananas for a really tropical flavour - love you recipe as well though - very nice.
