German Potato Salad

Serves 4-6

Description

This cold potato salad recipe is a hit at our family parties. It's really popular as a side salad but I have eaten it as my main meal for dinner before, its that yummy, stores well and once made can be eaten straight from the fridge!

Ingredients

1 Kg potatoes
360g Pickled Dill Cucumbers (Polskie Orgorki are good)
1/2 Red Onion (diced)
250g Whole Egg Mayonnaise (Good quality)
2 Tbs French Dressing
Small handful of chopped flat leaf parsley
Salt and Pepper

Instructions

1. Wash potatoes and boil in a large pot of water until they are *just* cooked. Should take around 20 minutes but check with a fork to make sure they are cooked. They should still be firm because you don't want them to fall apart.

2. While the potatoes are cooking, finely dice the cucumbers, red onions and parsley

3. Once the potatoes are cooked, allow them to cool a bit, but peel them while they are still warm (makes it a bit easier to get the skins off).

4. Let the potatoes cool completely once their skins are off and dice roughly into cubes.

5. Place potatoes in a large bowl and mix in the cumbers, onions, mayonnaise, french dressing and parsley and salt and pepper to taste.

Notes

This recipe can be made to taste. Add more cucumbers if you like cucumbers, more mayonnaise if you want it creamier, or more dressing if you like it tangier.

    Hey, I use dill pickle in my potato salad too! Great crunch and a nice jolt of flavour :)

    Just Like my Mothers I remember helping and peeling the cooked pototoes
