Cowboy Pie

Serves 4-6

Description

A twist on Shepherd's pie. I've been eating this since I was a kid. Recipe handed down from my Mum who got it from an American friend.

Kids love this coz of the name but also because it's really tasty :)

Ingredients

600g lamb or beef mince
1 onion diced
1-2 cloves crushed garlic (to taste)
1 can baked beans (I like ham sauce but whatever you like)
1 1/2 - 2 Tblspns Worcestershire Sauce
1-2 Tblspns Gravox powder or cornflour
1 1/2 Tblspns each of tomatoe and bbq sauce
4-6 potatoes depending on size - peeled and quartered
Handful grated cheese
Bread or Cornflake crumbs

Instructions

Heat oven to 180 C
Grease an ovenproof dish (or spray with oil)
Put potatoes on to boil, add salt to taste and cook till soft. Mash with milk and butter, set aside.
Heat a little oil in a large saucepan, add onion and garlic and saute till soft and translucent.
Add mince, break up and brown
Add All sauces, stir to combine. Add gravox or cornflour, mix and allow to simmer to thicken (You might want a little water at this stage but you don't want it really saucy)
Tip in can of beans, stir to combine and allow to simmer for about 10 mins. Season to taste.
Once cooked, tip mince mixture into dish and top with the potatoe. Use a fork to fluff it up a bit to make it quite rough.
Sprinkle over cheese to taste and if desired, some dried mixed herbs and the crumbs.
Bake in oven for approx 20 mins or till golden and bubbly.

Notes

Serve with peas or some other green veg if desired.
This is a very user friendly recipe and the mince will take lots of different flavours so experiment and come up with your own favourite combos :)

It can be prepared a day in advance if wanted. Just fridge and then put in oven when desired. Also suitable to freeze.
