1 can peeled Italian tomatoes 1 small onion 1 clove garlic 1 tablespoon tomato paste 1/2 teaspoon dried oregano 1/2 teaspoon sugar 1 teaspoon olive oil salt and pepper
Instructions
1. Peel and finely dice the onion 2. Add the oil to a non stick fry-pan on medium heat 3. When the oil is hot add the onion and garlic (crushed in garlic crusher) 4. Stir until golden in colour 5. Add the tablespoon of tomato paste and stir 6. Drain the juices from the canned tomatoes into the pan and stir 7. Chop the tomatoes and add to the pan 8. Simmer for 15 minutes 9. Add the sugar and oregano, stir well 10. Season with salt and pepper to taste 11. Serve with freshly cooked pasta and top with grated parmesan

I made this today with 4 medium sized tomatoes fresh from my mum's garden (instead of the canned tomatoes).
It was even more delicious!
