Cottage Cheese & Chutney Muffins

Serves 12

Description

A savoury muffin that is lovely with soup or just with lashings of butter.

Ingredients

1/2 cup fruit chutney (store-bought or home-made)
1/4 milk
1 large egg
1/4 cup canola or olive oil
1 cup cottage cheese(plain)
2 cups self raising flour
1 cup grated tasty cheese
1/2 tsp salt
1/4 tsp chilli powder (optional)

Instructions

Preheat oven to 210c or fanbake 200c.
If your chutney has very big pieces of fruit you may want to process it down a bit.
Measure the chutney, milk, egg, oil & cottage cheese into a bowl & mix.
Sift the dry ingredients into another bowl & stir to mix with a fork.
Tip the dry ingredients into the wet & fold.
Spoon into 12 muffin cases & bake 12-15 minutes until golden & cooked through.

Notes

My favourite chutney is spicy plum, (store bought) but you can use whatever you fancy.
Don't balk at this combo of ingredients these are very tasty & super easy to make.
