Cinnamon Scrolls

Description

These are made from an all purpose bread recipe that I have adjusted to make scrolls. You can also make cheese and bacon scrolls with the same base recipe. Just add about 1/2 cup diced bacon and 1/2 cup grated tasty cheese. I also have a mixer with a dough hook but if you don't have one of these you can use a bread maker to make the dough or do it by hand.

Ingredients

Bread dough.
500gm plain flour
1 teaspoon of bread improver, (found near the yeast in my supermarket, it helps the yeast do its thing)
2 teaspoons of dried yeast
1 teaspoon salt
2 teaspoons oil
300ml warm water

Topping.
3 tablespoons softened butter
3 tablespoon castor sugar
2 teaspoons cinnamon

Instructions

Place all dry ingredients in mixer bowl with flat beater and combine on speed 2 for 1 minute, change to dough hook,on speed 2 add oil , then add water slowly until combined, let the mixer knead for about 6 minutes, check the consistency of the dough halfway through, if its sticky add a little more flour, if dry add a little more water.
Oil a large bowl and place dough in it, cover with plastic wrap and let rise in a warm place out of draughts for 1 hour. Place dough back in mixer bowl, knead for another 3 mins.
Take dough out, I use a plastic sheet to roll on that is about 30 x 40 cm and I roll the dough out with a rolling pin until it meets the edges of the sheet, mix topping ingredients together, spread on dough evenly. Then roll up from longest side into a roll. Cut into 12 pieces and place these on a baking tray and let rise for 45 mins. Bake in preheated oven for approx 25-30 mins at 200c.
