White Christmas

Description

White Christmas is always a hit at Christmas time. It makes a great home made gift too. I'm not really a fan of dried fruit so I've made this White Christmas with cherries, almonds and choc bits.

Ingredients

100g glace cherries
100g blanched almonds toasted
1 cup powdered milk
1/2 cup icing sugar
1 cup rice bubbles (rice krispies)
1/2 cup dessicated coconut
50g dark choc bits
100g white chocolate
175g copha (vegetable shortening made from coconut oil)

Instructions

In a large bowl place the cherries, almonds, milk powder, icing sugar, rice bubbbles and coconut. Mix well.
Melt the chocolate and add to the dry mix. Mix well.
Melt the copha and add to the mix. When all mixed add the choc bits just before pouring into a lined and greased slice tin. (If you add the choc bits too early they'll melt)
Refridgerate until set.
Slice and enjoy.

Notes

You can put any fruit or nuts in the slice but these ones are my favourites.

    Not a silly question! Rice Bubbles are also known as Rice Krispies in the US and Copha is vegetable shortening made from coconut oil (sorry for the confusion- must be an aussie thing) :)

    I would really like to try this but at the risk of sounding dumb, what is copha and rice bubbles?
