Vegan Cinnamon Rolls

Delightful, super flavorful, warm, frosting coated cinnamon rolls!!!

Ingredients

Ingredients

1 and a half cup unbleached flour
half cup whole wheat flour (you can make this 1cup reg flour and one cup whole wheat.... I just find the whaet flour a bit heavy in this recipe. It'sjust a matter of preference and won't hurt the recipe)
4 TBL vegan margarine (I use earth balance)
1 tsp salt (I use sea salt)
1 TBL baking powder
3/4 cup soy milk
3/4 cup brown sugar
1 TBL cinnamon
2 tsp melted margarine
1 Tbs vanilla extract

Icing:
powdered sugar
plain soy milk
1/2 to 1 tsp vanilla extract (to taste)
start with about half a cup of powdered sugar and add the milk 1/2 tbs at a time un til you reach desired consistancy. I like mine thick so you can see it on the rolls... otherwise it will melt in and disappear.

Instructions

Preheat oven to 450. In a large bowl, combine flour, salt and baking powder. Cut in the margarine and using your fingers, kind of massage the butter into the dry ingredients. Next, pour in the milk and vanilla until the dough gets thick and soft. I find it's easiest to work the dough with my hands. With flouredhands ball the dough up and set it on a floured surface. Roll the dough into a long rectangular shape. Brush the top with melted earth balance (or vegan butte of your choice) and sprinkle the brown sugar and cinnamon on top. I like to add a thick layer of cinnamon/sugar mix...but you do it to YOUR tastes! make this your own creation!

From the long side of the rectangle, tightly roll up the dough. Then cut into 1 inch rolls (this recipe makes about 15 cut rolls). Place the rolls in a greased baking dish. Sometimes I like to add an extra sprinkly of cinnamon sugar to the tops before baking them (cause its pretty). I use glass pie dish and its the perfect size. Bake for 12-13 minutes, until puffy and golden. While the rolls are baking, this is a good time to start your icing.

Once the rolls are complete, remove them from the oven and allow them to cool a few mins then top with the frosting. Drizzle, pour, brush.... whatevertickles your fancy!

Notes

Don't let the "vegan" part sacre you! You and your family/friends will scarf them down and won't miss any of the animal biproducts! They taste just like regular old cinnamon rolls! SO AMAZING!
