Tuna or Ham Pasta Bake

Description

This is one of my favourite meals that my mother cooked for me when I was little. My husband is not a big tuna fan so I have modified the recipe to make a ham version for him.

Ingredients

1 cup uncooked pasta (spirals or macaroni is good)
1 small onion diced
1/2 red capsicum chopped
1/4 cup frozen corn kernels
1 small tin of tuna in oil (drained and flaked) *see notes
60 grams of ham chopped *see notes
2 generous teaspoons of grain mustard
1 tablespoon butter
1 tablespoon plain flour
1 cup low fat milk
2 tablespoons parmesan cheese
40 grams tasty cheese

Instructions

1. Boil the pasta in salted water
2. Melt the butter in a large frypan and add the onions, capsicum and corn kernels. Cook until the onion is transparent.
3. Stir in flour and cook for 1 minute.
4. Add the milk and mustard and bring to the boil, stir until the sauce thickens.
5. Drain the pasta well and add to the sauce. Stir in the parmesan and divide the mixture in half.
6. Add the tuna to one half, mix well and pour mixture into a small baking dish.
7. Add the ham to the other half, mix well and pour mixure into a small baking dish.
8. Top both with the tasty cheese and bake in the oven at 180 degrees for 10-15 mins until the cheese browns.
9. Enjoy

Notes

This recipe makes one tuna bake and one ham bake served in seperate small baking dishes. Alternatively you can make both tuna (double the tuna quantity and omit the ham) or both ham (omit the tuna and double the ham quantity).
