Spinach and ricotta triangles

30 minutes to prepare and 15 minutes to cook

Serves 10

Ingredients

500 grams fresh ricotta cheese
100 grams feta cheese
50 grams frozen chopped spinach
1 egg
250 grams butter
filo pastry sheets
salt and pepper

Instructions

1. Combine the fetta and ricotta
2. Defrost the frozen spinach in the microwave and squeeze out excess liquid
3. Add the spinach to the cheese mixture
4. Add and egg to the cheese mixture and season with salt and pepper
5. Mix well
6. Cut filo pastry into long strips
7. Layer 3 sheets on top of each other, lightly buttering each layer
8. In the left hand corner spoon in approximately 2 tablespoons of mixture and form the mixture into a triangle shape
9. Butter lightly around the edge of the triangle mixture and fold over the filo pastry to cover the cheese mixture
10. Continue folding over the pastry lightly buttering in between folds
11. Lightly butter the finished triangle on both sides and place on a lined baking tray
12. Continue the above process until all of the cheese mixture is gone
13. Bake triangles in the oven at 180 degrees for 15-20 minutes or until golden brown

Notes

*Optional : Serve with a green salad
