Great to get the kids eating some healthy lentils, but they enjoy the sausages the most!
Ingredients
Olive Oil 5 Pork Sausages 1 Onion 1 Clove Garlic 1 Carrot 2 Sticks of Celery 150ml chicken stock About 1 cup water 250g Lentils
Instructions
1. Start by cooking up the sausages in a pan with some olive oil 2. Whilst the sausages are cooking, chop up the onion, garlic, carrot and celery. You can chop them finely, but I don't mind keeping them fairly chunky 3. Put a pot on medium heat with some olive oil and sautee the onion, garlic, carrot and celery for about 7 minutes 4. Add the stock, lentils and the cooked sausages and bring to the boil. I usually add about 1 cup of water at this stage, just add as much as you like to get the soupiness you prefer! 5. Once it has reached boiling point, reduce the heat and let it simmer for about 30 mins 6. Your ready serve! Make sure everybody gets a sausage with their lentils :)
