Salmon log with parsley and crushed peanuts

Description

Great with dry biscuits and drinks.
If any leftover spread on toast for breakfast.

Ingredients

Log
250 grams Philadelphia cream cheese
1 tin (210 grams) pink or red salmon (I like to take out skin and large bones)
1 teaspoon smooth mustard (anyone that you like)
1 tablespoon lemon or lime juice
Salt and pepper to taste

Coating
1/2 cup chopped parsley
1/2 cup crushed peanuts
Some chopped chives is optional

Instructions

Mix all log ingredients together til smooth.

Prepare a double thickness of foil and spread nuts and parsley over it.
Place cheese mixture on top in a rough log shape, cover with some parsley mixture so that log is well coated all over.
Fold foil over cheese and gently form a log about 5 cm or 2 inch thick.
Twist foil ends of log to look like a Bon Bon.
Place in fridge overnight.
Slice or spread with a knife and enjoy with your favourite dry biscuits.
