Paleo Inspired Beef and Salad Wraps

Description

These wraps taste so fresh because of the crisp salad and tomatoes, whilst being quite filling as well due to the ground beef. Use a good quality, low fat ground beef and they are an awesome, healthy meal that you can refrigerate and also have the next day.

Ingredients

500g Ground Beef (I used Grass Fed beef, fresh from the market)
An Onion
A Carrot
Stalk of Celery
Clove of Garlic
Two handfuls of mixed lettuce
Cherry tomatoes
Olive Oil
Balsamic Vinegar (Or any other dressing/condiment that you would like to include for flavour)

Instructions

Chop the onion, carrot, celery and garlic into fine pieces. I use a food processor and get this done in a matter of seconds :)

Heat up a large frying pan with the olive oil and sauté the chopped ingredients until brown (about 4 minutes)

Add the ground beef and cook until brown (about 5-7 minutes). Then turn off the stove and leave the beef mixture whilst we prepare the salad and wraps.

Chop the cherry tomatoes into quarters.

Place the lettuce and chopped tomatoes in a bowl and mix in the balsamic vinegar to your liking. I've only made this once, but I plan on getting a little more adventurous with the dressing and condiments I use for flavour here... I'm thinking maybe some chilli sauce, or something with a bit of a spicy kick to it. Let me know if you have any good ideas on what could work...

I do the wraps one at a time. Start by filling a large bowl with warm water and then soak your first wrap in the water for about 30 seconds.

Take out the wrap and place it on a plate. Spoon in some ground beef and then add some salad with dressing/condiments.

Fold the left and right side edges and then roll from the bottom. It took me a couple of tries, but you will get the hang of it :)

Leave them for about 5 minutes and they will dry to be nice firm wraps that you can enjoy without making a mess

I made about 10 wraps with this recipe, but you can vary the amount of beef/salad you use in them to make more or less wraps

Notes

One of the challenges you face following the Paleo way of eating is that because you no longer eat bread, you really miss sandwiches and wraps. In this recipes, i've used Rice Paper rolls, which apparently contain extremely small amounts of rice and according to most, can be incorporated into a Paleo diet.
