Neda's plum filled shortbread rolls (Kifle)

Serves 120+rolls

Description

This recipe is from my friend Neda. She brings these in for us at work, they just melt in your mouth. Great with tea or coffee. Thank's Neda.
If you don't need to make for a large family I suggest you halve the recipe as this makes lots.

Ingredients

1 kg S.R. Flour
250 grams unsalted butter
600 ml thickened cream
3 eggs
Packet vanilla sugar (30 grms)
1 1/2 cups castor sugar
500 grm Powidl (plum spread)

Instructions

Sift flour and rub in butter by finger tips or food processor till crumbly, not too long as to melt the butter.
May need to make in 2 batches.
Lightly beat eggs and add with all the other ingredients to flour and butter.
Knead gently and take small fist size balls of pastry and roll out thinly and place something the size
of a dinner plate or a saucepan lid onto pastry and cut around. Divide in half then quarters then
these in half again to make 8 wedge pieces.
Place 1/2 teaspoon of plum spread onto the wide part of wedge and roll starting from the wide end.
Place onto baking paper covered large baking tray.
Bake for about 12 minutes at 170 deg C fan forced or 180 deg C conventional oven.
