Meringue Cookies
Description
Meringues but as a cookie. Yummo!!
Ingredients
3 egg whites1 cup caster sugar(fine sugar)
1 Tb cocoa powder
150g chocolate chips
1/2 tsp vanilla essence
Instructions
Preheat oven to 160c.Whisk the egg whites until white & foamy on low in a mixer.
Increase speed & gradually add the sugar. Whisk until stiff peaks form.
Fold in the sifted cocoa, vanilla & chocolate chips.
Line a baking tray with parchment.
Drop 2-3 Tb of mixture on the tray.
Bake 30-35 minutes.
Notes
I don't have much success making pavlovas or meringues but I don't mind because these cookies are soooo yummy. They never last long in our house. Luckily they are best eaten on the day.
