Golden Syrup Dumplings

Description

Another one of my mother's wonderful 'country kitchen' recipes. A rich, hearty winter dessert for those with a sweet tooth (my kids love these).

*Suet Mix is a blend of flour, suet, baking powder, salt - it can be hard to find sometimes (Tandaco Prepared Suet Mix)

Ingredients

Dumplings:
1/2 cup self raising flour
1/2 teaspoon salt
1 cup suet mix
1/4 cup cold water

Syrup:
1 tablespoon golden syrup
1 cup water
1 tablespoon butter
1/2 cup castor sugar

Ice cream or cream to serve with

Instructions

Sift flour and salt into a bowl and stir in suet mix. Add sufficient cold water to make a stiff dough. Divide mixture into 8 pieces and gently roll each piece into a round ball.

Place gently into simmering syrup, cover and cook for 20 minutes. Dumplings work best if you don't remove the lid during the cooking time.

* dumplings will double in size so don’t place too close together.

Syrup:
Place all ingredients into a saucepan and bring to the boil. Reduce heat until simmering.

Serve with a scoop of ice-cream, a dollop of whipped cream or a drizzle of fresh cream.

Notes

Overcooked dumplings will fall apart. Make sure the syrup/sauce is simmering very gently and serve as soon as they cooked (dumplings are light and fluffy when cooked)..
